A test of logical thinking

If you liked my first puzzle, here is another little riddle. It's so silly that I was reluctant to include it here, but I heard that some people actually find it puzzling, so here it is:

Three men meet at a table in a restaurant, and each of them orders a set meal for £10. Each man pays for his own meal at the end, and the waiter collects a total of £30 from them.

As the men are leaving, the waiter suddenly remembers that there was a special offer of three such meals for £25, so he rushes after the men to give them a refund. But it's awkward to split the £5 between the three men, so they each take £1 and tell the waiter to keep £2 for himself.

Thus, the men have paid a total of £27, and the waiter received £2. What happened to the remaining £1?
